A good Barolo should make you think of autumn. Pour it into a wide-bowled glass and hold it up to the light. It should glow like burnished copper caught by the lowering sun. Its aromas should rise from the glass, one ribbon at a time, evoking damsons, sweet cherries, dried orange peel, wet clay, forest floor, truffles, wisps of woodsmoke and hazel shells. It should be big in every way except colour and it should be drunk with hunter's game and foraged mushrooms.
