This delicate blend of Pinot Noir, Trousseau and Poulsard is as pale as a ghost's blood and has the most fragile flavours imaginable, tasting more like the product of an anaemic redcurrant than a grape, but that's all part of its charm. Subtle, haunting and beguiling, it's a wine that treads a thin line between less is more and less is less, but gets it right. The texture is nothing more than a sigh, but there is fruit concentration, at least enough to give it weight in the mouth. It's tempting to compare it to Burgundy, because the flavour spectrum overlaps, but it is lighter and has a little more asperity. Enjoy it with comté cheese or sliced dried sausage. 12.5% alc. Drink now-2025 (Trousseau ages counterintuitively well).
