Only the 4th vintage of this Cabernet Sauvignon, so a potential collector’s item, but we won’t be holding onto it for investment purposes, because it’s too damned good to drink! This is an Australian Cabernet that sets itself apart from the norm, showing a lightness (12% alc!) and elegance that is wholly unexpected (unless you already know Timo Mayer’s wines). There’s a timeless feel to it, as if it could have been made in Pauillac in the 1960s as much as the Yarra Valley in 2017. The fruit is less extracted than a typical Australian Cabernet, so it steers a course away from saturated cassis and towards blueberry and wet hedgerow berries, and a call-back to classic ‘Left Bank’ aromas with its hint of cold graphite and stalky raspberries, perhaps the result of the 100% whole-bunch fermentation. Despite all this talk of finesse and elegance, there is also real depth and richness to the fruit and a discreet tannic spine that will hold it in good stead for the next decade or more.
