Apostolos Thymiopoulos explained to us that low yields and a soft extraction are the two key factors here. The low yields confer intensity of flavour while the gentle maceration teases those flavour-packed molecules out of their shell. The result is a wine with the bodyweight of a Pinot Noir and the aromatic beauty of a Nebbiolo. It’s an unoaked Xinomavro from young vines and is wonderfully juicy and fresh with a wisp of gunpowder smoke, like a November field at sunrise on the day after Guy Fawke’s Night. Organic. Biodynamic. 13% alc. Drink now-2022.

It's not unlike Nebbiolo in build. Jeunes Vignes clearly has quite a bit of ageing potential although it's a young(er)-vine cuvée…. This, by the way, is one of those reds you could drink with or without food, and I'd serve it relatively cool but not chilled.” - February 22nd 2019
