This style of sherry will appeal to people who don't mind their apples knobbly and their potatoes gnarly. Sherry en rama is raw sherry, i.e. straight from the cask, without the heavy filtration and clarification that most sherries undergo, in a bid to appeal to the consumer's preference for crystal clear wines. However, filtration removes a lot of the natural flavour and texture of a wine, so if you don't mind your carrots slightly bent and your sherry slightly cloudy, you will love this!

JancisRobinson.com: "As briney as their Classic Manzanilla but more pungent. Smells of seashells and something like heather honey though of course it is bone dry. Dusty/musty in a good way (ie nothing to do with TCA). Creamy and deep on the palate but still zestily dry. Long yeasty finish. Very good. Flavour goes on and on." 17 points

JancisRobinson.com (Julia Harding): "Average age six years. Light plate filtration. RS 1 g/l. Bottled November 2016. No filtration, clarification or cold stabilisation.  Strong yeasty nose. Deep, yeasty, nutty palate, rich but with terrific freshness. A complete wine with great length. Incredibly fresh and mouth-watering on the finish." 17.5 points
