The reason why this Savagnin is called ‘Ouillé’ is because when people taste it they go “Ooh yay!” I’m afraid to say that passes for humour around these parts. The real reason is because it refers to the practice of ‘ouillage’, which is the technique of topping up the wine level in a barrel to protect it from unwanted oxidation. The term is used in the Jura to differentiate white wines made this way from those that are aged oxidatively or under film-forming yeasts (sous voile), so the wines made this way are jewel-bright.

This one is a real beauty, one of the most stylish whites on our list, showing crystalline purity to the fruit (lemon, mandarin, star fruit) as well as an impression of rocks that have had a losing encounter with a hammer and a chisel. That minerality is balanced by the most delicate floral overtones, which bring to mind the feeling of an early spring morning. It’s a hard wine to describe, bit an easy one to love. 12.5% alc. It fermented and aged in foudre and 500-litre barrels for ten months. It has good ripeness and nicely integrated oak. The palate revealed pungent flavours of great intensity and good acidity. 18,000 bottled produced. The aim is to make Savagnin the grape of the Domaine. This is my favourite wine of the portfolio, a wine with energy and character.” 92+ points
