It was a Friday evening and we thought we better taste this before closing for the weekend. We took the sample bottle out of the fridge, took one sip and immediately downed tools and headed to our favourite BYOB sushi restaurant, because we knew we had to introduce this wine to the best red dragon roll this side of Tokyo. It was a joyful occasion with many more introductions (spider roll, hamachi carpaccio, tuna tataki) and everything worked perfectly, the Sauvignon Blanc entertaining the food without being domineering and the sushi pulling the wine into its circle of friends and letting them bounce off each other. 12.3% alc. The Wine Advocate: "The pale and restrained 2020 Talinay Sauvignon Blanc has subtle herbal and spicy notes and even lower alcohol (12.3%) than the other Sauvignon Blanc. It's a crystalline white with focus and precision, very clean and tasty, with chalky minerality, beautifully textured and very long. They select the grapes from the vineyards with higher content in limestone and a north exposition coupled with the effect of the sea breeze, and like the rest of wines from this variety, it was bottled unoaked to keep the varietal purity without any makeup. With time in the glass, the herbal character grows and the freshness maintains. They achieved this harvesting the grapes a little earlier and with the help of the dampening effect of the limestone in the soils. It's an incredible value for the price. Drink now-2028." 95 points
