If you haven’t tried a Païs from Chile before, this is a great example at an affordable price. It pours a pale cherry colour and seems to taste of cherries, although that might be the power of suggestion. Either way, it’s a very light wine in every respect, but the amazing thing about a good Païs is that it ages beautifully, despite its filigree tannins and translucent body. So, you can drink this now, for its youthful, juicy charms, but I think it will show its best from 2027 through 2032 if not a bit beyond, developing more of a ‘Pacific Burgundy’ character. Aged in 400 litre French oak. 12.5% alc. Drink now-2034.
