This spectacular Provençal property, situated amid olive trees and pine forests, just up the hill from Domaine Miraval, is owned by Chateau Talbot, the legendary St Julien estate. Owners, Jean-Paul and Nancy Bignon, fell in love with it as soon as they saw it and you can easily see why, it’s the perfect escape from the ardours of living in a Bordeaux chateau.

This is their top rosé, made from sustainably-farmed vineyards, where biodiversity thrives thanks to the flowers they have planted between the rows of vines to encourage insects and a healthy, microbially-rich soil. It’s a delicious rosé, which we discovered at the largest annual rosé tasting in France, where it showed a harmony and fluidity that was lacking in so many of the others, not just those within its price range, but the ‘yacht’ rosés too. It tasted ‘handmade and ‘complete’ and wasn’t dogged by the amylic aromas of cold-temperature fermentation that makes so many rosés taste the same. It offers a kaleidoscope of flavours befitting of a nonsense poem, with white strawberry, blood orange, pink grapefruit, and orange peach. It has a gentle texture, enough to handle light summer foods, and we have so far put it through its paces with a Moroccan couscous, hake cooked with mussels in white wine and crab tonnarelli with lemon and parsley and it went well with all of them, albeit clinging on by its fingernails to the crab pasta, so I wouldn’t suggested it with anything stronger in flavour than that. 13% alc.
