From the famous rocky outcrop of decomposed granite that is farmed by local heroes like Eben Sadie and Craig Hawkins, the 2021 ‘Fire By Night’ shows classic Paardeberg characteristics of richness and minerality in equal abundance. Pear, mango, apple granita, green plum, lime juice and thatching straw. A beautiful wine named after an episode in The Bible where God provides a pillar of cloud by day and fire by night to show the Israelites the way during their exodus from Egypt. Chris tried to capture his own feelings of isolation, loss, direction and purpose on the label. 13% alc. Fermented in cement eggs. Drink now-2034.

Greg Sherwood MW: “Previously known as Broom Ridge, this wine has reverted back to its original name and label due to popular demand. From vineyards on the property Chris bought in the Swartland, the vines were planted between 1971 and 1985 on decomposed granitic soils. The aromatics are predictably stony, dusty and pithy with white peach, crunchy pear, green tea, fynbos and tangerine undertones. The palate shows its usual tell-tale reductive flinty hints together with an incredible liquid minerality that is supported by crystalline pure fruits and pinpoint fresh acids. Once again, a very impressive showing from this Paardeberg vineyard.” 96 points
