There’s a moment while drinking this wine that you want to get off the ride, like when you reach the top of the roller-coaster and your flight instinct kicks in. It’s just the sheer, vertiginous, knee-weakening acidity that gets you reaching for the safety harness, but it’s too late and you’ll be so glad you stayed on board, because the wine has exactly the right amount of fruit to counterbalance the steep steel rails and corkscrew bends. It is a profoundly mineral Sauvignon Blanc, like Sancerre used to be before global warming, not in the ‘struck match’ or ‘gun flint’ mineral style, but in its linear, stratified precision.
