I really should drink more barrel-fermented Sauvignon Blanc. It’s one of the world’s great white wines, whether it’s a Graves from Bordeaux, a Blanc Fumé from California, or a brilliant interpretation from South Africa, like this masterpiece from Duncan Savage.

It’s perfect for white tablecloth dining, as it has the holy trinity of structure, elegance and complexity, but it’s also just downright delicious with its notes of elderflower, creamy pear, apple yoghurt and shavings of sandalwood (that will be the new oak). Everything is restrained and subtle on the nose, but it amplifies on the palate, meaning it can pair with ocean royalty like halibut, lobster or turbot. 13.5% alc. Drink now-2032.
